Mandarin Salad


 Ingredients (serves 4)

  • 2 x 310g cans mandarin segments, drained
  • 1 large red capsicum, deseeded, thinly sliced
  • 2 large carrots, coarsely grated
  • 60g snow pea sprouts, trimmed
  • 3 shallots, trimmed, sliced
  • 2/3 cup (90g) pecans, thinly sliced
  • 1 tbs sesame seeds, toasted


  • Dressing

  • 1 1/2 tbs extra virgin olive oil
  • 1 tbs red wine vinegar
  • 2 tsp honey
  • 3cm piece fresh ginger, finely grated
 

Method

  1. Whisk the dressing ingredients in a small bowl until well combined.
  2. Place the remaining ingredients into a large serving bowl. Drizzle with the dressing and toss gently to combine.
